Peel and slice the carrots into rounds. Boil or steam until very soft, about 10β15 minutes. - Mash:
Drain well and mash the carrots into a smooth paste while they are still warm. - Make the dough:
Add salt, pepper, cornstarch, and flour gradually. Mix until you have a soft dough that isn’t too sticky. Add a little more flour if necessary. - Shape the buttons:

Bring salted water to a gentle boil. Add the carrot buttons and cook until they float, then continue for about 1β2 minutes. Drain. - Make the sauce:
Heat butter or olive oil in a pan. Add garlic and cook for about 30 seconds. Stir in soy sauce, chili sauce, honey, sesame oil, and water. - Toss:
Add the cooked carrot noodles to the pan and gently toss until they’re completely coated in the glossy sauce. - Serve:
Finish with sesame seeds and chopped green onion. Serve hot. π₯π₯
Tip: Make sure the mashed carrots are well drained before adding flour. Too much moisture will make the dough sticky and difficult to shape.
