🥔 Crispy Mashed Potato Fries

These crispy mashed potato fries are golden and crunchy on the outside, soft and cheesy inside, and packed with garlic and herb flavor. They’re perfect as a snack, appetizer, or side dish with your favorite dipping sauce.

Ingredients

  • 4 medium potatoes
  • 1 cup shredded mozzarella cheese
  • 2–3 tbsp all-purpose flour
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp dried rosemary or Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Oil, for deep frying

Instructions

1. Boil the potatoes
Peel and cut the potatoes into chunks. Place them in salted water and boil until completely tender, about 15–20 minutes.

2. Mash until smooth
Drain the potatoes very well and mash them while they’re still warm until smooth and lump-free.

3. Make the potato mixture
Add the shredded mozzarella, flour, parsley, rosemary or Italian seasoning, garlic powder, salt, and black pepper. Mix thoroughly until you have a soft but firm dough that can be shaped.

4. Shape the fries
Lightly flour your work surface. Place the potato mixture on it and gently press or roll it into an even thick rectangle.

Cut it into long, fry-sized strips.

5. Chill briefly
Place the potato strips on a tray and refrigerate for 15–20 minutes. This helps them hold their shape when frying.

6. Heat the oil
Heat enough oil for deep frying to approximately 350°F (175°C) over medium heat.

7. Fry until golden
Carefully place the potato fries into the hot oil in small batches. Fry for about 3–5 minutes, turning occasionally, until crisp and beautifully golden brown.

Don’t overcrowd the pan because this can lower the oil temperature.

8. Drain and serve
Remove the fries with a slotted spoon and place them on paper towels to drain excess oil.

Serve immediately with garlic mayo, ketchup, ranch, or your favorite dipping sauce. 🔥
