🍗 Sheet-Pan Chicken & Potatoes with Tomato Sauce

A simple, hearty oven-baked dinner with juicy seasoned chicken, golden potatoes, and a rich tomato sauce. 🍅🥔🔥

Ingredients

For the chicken & potatoes

  • 4 chicken thighs or chicken pieces
  • 4 medium potatoes, sliced into rounds
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp chili flakes, optional
  • Fresh parsley, for garnish

For the tomato sauce

  • 1 cup tomato sauce/passata
  • 2 tbsp tomato paste
  • 2 cloves garlic, minced
  • ½ tsp paprika
  • ½ tsp oregano
  • ½ tsp black pepper
  • Salt, to taste
  • ½ cup water or chicken broth

👨‍🍳 Instructions

  1. Prepare the potatoes:
    Arrange the sliced potatoes and onion on a large baking tray. Drizzle with olive oil and season with salt, pepper, paprika, garlic powder, and oregano.
  2. Season the chicken:
    Pat the chicken dry and coat it with olive oil, paprika, garlic powder, oregano, salt, and black pepper.
  3. Make the sauce:
    Mix tomato sauce, tomato paste, minced garlic, paprika, oregano, salt, pepper, and water or broth.
  4. Assemble:
    Place the seasoned chicken over the potatoes and onions. Pour the tomato sauce over and around the chicken.
  5. Bake:
    Cover loosely with foil and bake at 400°F (200°C) for about 35 minutes.
  6. Brown everything:
    Remove the foil and continue baking for 15–25 minutes, until the chicken is fully cooked and beautifully browned and the potatoes are tender.
  7. Serve:
    Sprinkle with fresh parsley and spoon the flavorful tomato sauce over the chicken and potatoes. 🍗🥔🍅
