Ingredients
For the chicken & potatoes
- 4 chicken thighs or chicken pieces
- 4 medium potatoes, sliced into rounds
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp dried oregano
- ½ tsp black pepper
- ½ tsp salt
- ½ tsp chili flakes, optional
- Fresh parsley, for garnish
For the tomato sauce
- 1 cup tomato sauce/passata
- 2 tbsp tomato paste
- 2 cloves garlic, minced
- ½ tsp paprika
- ½ tsp oregano
- ½ tsp black pepper
- Salt, to taste
- ½ cup water or chicken broth
👨🍳 Instructions
- Prepare the potatoes:
Arrange the sliced potatoes and onion on a large baking tray. Drizzle with olive oil and season with salt, pepper, paprika, garlic powder, and oregano. - Season the chicken:
Pat the chicken dry and coat it with olive oil, paprika, garlic powder, oregano, salt, and black pepper. - Make the sauce:
Mix tomato sauce, tomato paste, minced garlic, paprika, oregano, salt, pepper, and water or broth. - Assemble:
Place the seasoned chicken over the potatoes and onions. Pour the tomato sauce over and around the chicken. - Bake:
Cover loosely with foil and bake at 400°F (200°C) for about 35 minutes. - Brown everything:
Remove the foil and continue baking for 15–25 minutes, until the chicken is fully cooked and beautifully browned and the potatoes are tender. - Serve:
